I just made and ate this soup. It's delicious. Very full flavor and it makes a big difference if you use homemade stock instead of store bought. I use Ina Garten's recipe for stock and it really makes everything much richer. The basil is optional but really adds another layer of flavor to it that really rounds it out nicely. I think it you season this correctly and follow the recipe, you'd be hard pressed to find a better tomato soup.
The only con here is that it doesn't make much. I had a large mug of it and my husband had a cereal bowl of it and there is nothing left. I'll probably double it next time and may try it with canned tomatoes to see if that is a suitable substitute for fresh in a pinch.

imade it last night, it came out good but not great. I've had better. maybe it depends on the tomatoes or how long it stays in the oven.

I am in love with this soup. I made it last night for myself and my mom and we are both sort of obsessed with it. Roasting the vegetables gives it a great flavor and the consistency is just perfect. I'm glad this was the first recipe I used to try out the immersion blender I got for Christmas! Thanks, Tyler!

Thank you Tyler! Lovely Soup! This soup is simple but entertaining worthy. I forgot to buy cream. The initial result was -ok without it,-but lacked depth of flavor-so hoping I would not ruin it...I added 1/4 cup low fat evaporated milk-as this was all I had in the pantry. To my delight-It was wonderful. Just a hint of creaminess without being heavy. I used Basil about 1/2 cup hand torn leaves. My immersion blender lacks true power- that left some pulp- but it did not take away from its presentation or taste. I imagine had I used the heavy cream I would still love this soup- but luckily- I was able to have a reduced fat content with satisfactory end results.
Firebookie- I froze half of this after blending and cooling. You may want to omit the basil until you thaw and reheat.

This is absolutely the easiest and most delicious tomato soup to make! Of course, it helped that I had wonderful, fresh tomatoes from a neighbor's garden. Total comfort food for a chilly day.

Yum…this soup was so good. I served it at a party on Christmas Eve in shot glasses with a small grilled cheese sandwich resting on top. Everyone raved on the soup!

I've made this recipe several times and it is AMAZING! I top it with a dollop of sour cream and spicy garlic croutons. The best tomato soup I have ever eaten. Super easy too!
