I have tried so many different rice pudding recipies, but none came out even close to this one. They were either too thick, too thin , to creamy, or too dry. But, this recipie is just perfect! Simple and Tasty. I did not put lemon in all of the pudding because i was not sure if I would like it. I did like it because it gave it a fresh lighness to the really rich dessert. Even though I liked the lemon I still prefer the simple flavor of just cinnamon. GREAT RECIPIE!!!

I,ve made 3 or 4 different kinds of rice pudding,but this recipe is by far the best.

maybe i did it wrong--the directions weren't very detailed--but this turned into a globbly gool that looked and tasted (pehaps mostly texturallyterrible. i think the milk separated?
so my rating is 1 star because i followed the directions and really can't imagine where i could have strayed

Tyler Florence, thanks for a great recipe. I have always liked rice pudding, but on a college student's kitchen equipment budget double boiler recipes are out of the question. I tried orange zest instead of the lemon and felt that it gave a more mild aromatic flavor. Thanks again!

This is the best rice pudding I've EVER had. Period, the end! Everything works so well together and the lemon zest totally makes the recipe. It's subtle but definately present and completely suprising. The cinnimon (in my opinion is the back bone of any good rice pudding recipe and that's no different here; it brings everything else together perfectly. What's great about making your own rice pudding, I've found is the fact that you can control the consistancy; I happen to like a firmer pudding rather that gloopy and I was able to cook it longer to get it just right. The best part is that all the ingredients are pretty common and I had all of them on hand... important when you're trying to satisfy a midnight-finals-week craving (like me.

I did not believe this pudding could be this good without the cream or egg yolks of most recipes. It it!- I made it with 1% milk and white basmati rice, the lemon zest adds a lovely dimension. You'll never miss the cream (or calories !
