I loved this pudding! Next time, however, I will do without the lemon zest- it gave a nice flavor, but I like the "traditional" flavor a little better.

Absolutely delicious! My one critique would be to either use the grated zest of a small lemon or else grate the zest less finely. I found the lemon flavor just a touch overwhelming. This is a great recipe even so. And to answer a previous reviewer's question, the recipe calls for three cups of cooked rice which means you cook one cup of dry rice in two cups of cold water for 15-20 mins. to produce three cups of cooked rice. Hope this helps.

This rice pudding recipe is easy to prepare and tastes as if it were the type that required much more time. It is a good one to have because we don't always have the time to prepare more complicated recipes. This one is a keeper.

I wasn't crazy about the lemon or cinnamon. I also thought the butter made the dish taste oily, not creamy like I expected. I still prefer the old standard recipe from Joy of Cooking.

I only used 1/2 tspn. of cinnamon and found it overwhelming. It also turned the dish light brown, a bit strange looking! Otherwise, it was tasty especially warmed in the microwave for about 30 seconds.

This recipe was very good till I added the lemon zest. It completely changed the flavor of the pudding. I would highly recommend omitting the lemon zest.
