I'm actually not a big fan of beets, but when I read this recipe it sounded like a great combination of flavors...it certainly was. Either I bought the world's freshest and most delicious beets, or I have just suddenly become a fan of them in this roasted form, but they were wonderfully sweet and earthy, firm but tender...everything about this salad was great. I left the lemon juice out of the blue cheese dressing, because I am a fan of the pure blue cheese flavor - I loved the chives in the dressing...not something I'd usually do - it was a little thick so I thinned with milk...very yummy. Will add this to my regular repetoire, for sure!

This is an excellent blend of flavors coming together all at once. It still also tastes very light and fresh, even though some of the ingredients are very heavy.

This salad was very good, the fresh beets were a little hard to peel, and honestly I think canned beets have just a good of a flavor, I've been making it will canned since.

Salad did turn pink, and the flavors were only ok. It seemed to be missing something. I think an oil and vinegar dressing may have been better and then add some crumbled blue cheese.

Wonderful salad with beautiful color and texture! Everyone loved it --- especially my chef hubby! (He even told me to be sure to keep some of the dressing made up for keeping on hand in the fridge!

This is an easy salad to pull together and it CAN'T go wrong. Everyone will love it, even confirmed beet slackers. The many textures and multiple, yet complimentary, flavors make your senses feel so satisfied.
No more boring salad that taste like college cafeteria greens.

Great combo of flavors but my (overhelpful family tossed too vigorously and the beets mixed with the dressing made an odd pink color. Tasted great but took a few a bit to get past color. Just beware of the salad servers getting too busy!
