    Great taste, especially if you let the prosciutto crisp up a little. I used chicken instead of veal to save on some calories and fat.

    The pan gravy adds another depth of flavor that I really enjoyed.

    Saw it on food911 awhile back and finally made it tonight. It was delicious! Very easy to make and yummy to boot. A definite keeper. Will make it again soon.
    Directions were easy to follow, you can't go wrong!

    I'm always on the lookout for recipes that can be adapted for use with wild game. This is excellent with partridge breasts and thin large game round or loin steaks. Tenderizing the meat makes a huge difference in the texture of lean meats and the prosciutto tames any potential gaminess.

    We put the sage leaves between the veal and the prosciutto. Toothpicks were not needed.

    Wonderful classic. This is also great with thin sliced turkey breast or chicken breast instead of veal.
