Good recipe but the ingredient measurements are way too high for 1 1/2 lbs of fish. Even the two cups of almonds--I used sliced, not slivered--were way over the top. I had to halve everything except the oil and butter in the pan--and for the wine, I used 2/3 cup of wine and 1/3 cup of broth to make one cup bc I like having enough gravy. I prefer cutting the wine w/some broth to cut the bitterness. One of my all-time fave tricks is to keep a paste of equal parts butter/flour in fridge. I cut off a dab of it to add to the gravy at end in place of plain butter. The paste thickens the gravy into a smooth, not runny gravy. All in all a simple and tasty dish, but unless you're cooking 3 lbs of fish, you do not need to use the amounts of ingredients given.

I made this tonight for my husband for Valentine's Day and it was DELISH!!! I used whole wheat flour instead of regular flour and Smart Balance instead of butter - to make it healthier; and the sole was amazingly moist! The shallot and wine sauce was incredible and really flavored the sole well, and the almonds added the perfect heart-healthy topping! Served it with the parmesan green beans from this episode which were equally amazing! GREAT RECIPE Tyler! One that I will definitely make again and again! Thanks! (My husband is on his third helping as I type this!!!

Very yummy. Also easy and fast. This recipe has gone immediately into my files for next time. I used sliced almonds instead of slivered and less flour and eggs.

Tasty, but there's no way you need 2 cups flour and 4 eggs to coat four sole filets. Start with 1/2 cup flour and 2 eggs/one-half cup milk. Also suggest using sliced (not slivered almonds as this is a delicate dish and the slivered almonds were too overpowering.

From the first time I tried this receipe, it has become one of the families geastest receipes. We have done alot of fishing in Alaska and use our Halibut fillets. It is great with the Snapper family,too. Thank you, Tyler

I also did only the Sole Almondine from this episode. What a great dish! I din't had sole, but used tilapia instead... My husband loved it! Is his favorite fish. I also did it with chicken for tomorrow's lunch, and it was good also, but is much better with the fish.
Will get sole next time...
