We love this recipe. It's just wonderful and more wonderful when I use these ingredients from my garden! I used heirloom yellow pear tomatoes along with cherry tomatoes and loved the color!

Great easy recipe. I liked his addition to steam the eggplant before roasting it made such a difference in texture. I added red pepper flakes to my onions and garlic saute for a little spice.

I wasn't too impressed with this tomato sauce. I ended up adding lots of herbs to it in order to make it flavorful.

Not bad. I used penne instead of Spaghetti and I added a pat of butter to the tomatoes towards the end. Sugar definitely helps tone down the acidity. I think I would cube the eggplant next round to 3/4 inch chunks. Deep fried eggplant would have been an interesting twist and give it a little crunch. Try it !!

Was pleasantly surprised with the results. Had to definitely sweeten the sauce with sugar, about 1 tbsp, and added about a cup of crushed tomatoes (a pound of pasta is a lot! Had a larger eggplant and ended up sectioning the slices in 4. Added the cherry tomatoes to the roasting eggplant half way in. One thing about the roasted whole cherry tomatoes, had to 'burst' them prior to serving, to make it easier to eat. In the end all came together nicely and looked great. Next time I will add shrimp.

After this recipe, I'll never use canned spaghetti sauce! The flavors in this dish are amazing! My boyfriend loves this meal and we don't eat too much meat so this is a great dish if you are vegetarian. However, sometimes I add meatballs (you can buy the frozen ones and it tastes great in it as well.

Simple flavors. Not bad for a low-key night, but I wouldn't add it to the regular rotation. Can probably omit the cherry tomatoes next time
