I, too, loved the enchiladas, the beans were great but the rice was, well, terrible. I had to throw it out. Maybe too much turmeric? Maybe chicken broth would have helped. I don't think I will even try it again. But the enchiladas and beans are definitely a keeper.

I used chicken stock instead of water for the rice. It was good. The black beans were excellent and easy to make.

The beans are delicious. I used canned and they turned out great. The bay leaf adds a unique flavor, which unfortunately my husband didn't care for. I'll just omit it next time. The rice is very light and nicely compliments the other spicy dishes. I added extra tumeric and less rice. My family enjoyed it.

Both the rice and beans were not hard to make however the rice was very bland. Liked the color but it lacked more kick. The beans were better.

The beans were excellent and not really that much more effort than opening a can. The rice, well.. altogether another story.. the beans were 5 star and but the rice was only 1 star - so split the difference with 3 stars for the two. I haven't given up on the rice though.. will try it one more time with chicken stock standing in for the water and see how that is.

I only made the yellow rice and it was awful. No one could even get one bite down. I had never cooked with tumeric before and never will again. The flavor is terrible. I ended up throwing out the whole pot. Would be interested to see if anyone liked this dish. I don't know if I'm missing somethng.
