Another disappointing Food Network recipe. I need to stop doubting myself and go with my gut instinct on these things. I knew before I even started that the ratios of the dough ingredients were strange. But I didn't listen to that little voice inside my head. I should have.
Anyway. There is about four times more oil in this recipe than would be normal for a pizza dough. A tablespoon would probably do quite nicely here, maybe two, but definitely NOT a quarter cup.
I stupidly followed Tyler's instructions and dumped in all that oil anyway and woumd up with something that more closely resembled a pie crust or shortbread than a pizza dough. I kneaded it for a few minutes by hand (you don't need a fancy mixer to make such a simple dough and, almost immediately, my hands and the counter were glistening with a film of oil. Truly awful.
I didn't have time to make another batch of dough and couldn't bring myself to attempt the filling. So we ordered a pizza instead.

I substituted half of the white flour for whole wheat flour to make it a little more healthy.
Came out pretty good overall. However, next time I would add salt to the dough and use less ricotta cheese and put in mozerella instead.
Cutting the slits worked out well. The calzones look beautiful.

This is simply the best recipe yet! You can substitute the ingredients and it still will be a hit!!!! Thanks for this quick fix..

The filling was good. The dough was little heavy, maybe I didn't allow to rise enough. All in all, it was a good recipe.

I made this twice and it turned out great. I substituted the sauteed spinach for a 10oz. frozen box (thawed and squeezed. One tip: taste the filling before adding the egg. You may need to add a bit of salt depending on the strength of the cheeses. My first attempt was a bit bland.

We liked these...the cheese mixture was great as was the dough (even though I don't have a mixer and had to use my hands. But, I would probably cut down on the spinach. It was like eating a spinach salad inside of bread. I will definitely be making these again, but next time, less spinach and I would probably add italian sausage or pepperoni. Yum!

I have made this recipe over a dozen times and while I'm not the most spectacular chef in the world, these calzones have always turned out wonderfully. I confess that I only followed the recipe exactly the first couple of times and, since, have altered it to add in extra amounts of cheese, mushrooms and pepperoni (and the addition of turkey bacon the last time I made them. So very delicious, especially when served with chilled pizza sauce on the side.
