    I have been cooking for many years as a gourmet and I made this recipe after seeing it on tv. I followed the recipe exactly and I found it to be a great disappointment. It was flavorless and dry. I usually love Tyler's recipies but this was a lot of work (1 1/2 hours for nothing.

    frustrating! i just picked up fresh chestnuts and i have half a butternut squash in the fridge ready and waiting to be used for something...i searched for fresh chestnut recipes and this looked good and i have all the ingredients but i don't want to make it because it seems like no one used fresh chestnuts and i like to read reviews before i make a dish. oh mehh back to the drawing board

    this recipe was easy, and so tasty, another wonderful recipe by tyler florenceI
    I could not get fresh chestnuts, so I used the canned veision, they were very tasty,
    everyone raved about the dish, i also made a little sauce, using the squash , Great

    Took a long time to prepare, but was delicious in the end. Used pecans instead of chestnuts with good results. Needs quite a bit of salt, probably 1 tblsp at least in filling by the end.

    Like others, I have a hard time finding chesnuts, so I use toasted pine nuts. Works great. I omit the egg, substitute proscuitto because it's less fatty than pancetta, I buy store-bought lasagna (who has time to make their own pasta?!, and I mash the filling with a potato masher to get a good consistency.

    I tried using other cheeses, but I found that anything other than parmesan or romano is too fatty and makes the finished product REALLY greasy. If you switch the cheese, ONLY use a hard cheese.

    Yes, it's a pretty subtle flavor palette, but if you add more of the flavoring ingredients, it will help. I generally don't measure, I just throw it all in the pot. It seems to taste good no matter what.

    I was shocked how quickly the ingredients for this dish added up. Fresh chestnuts were not available so I used canned - $10. Since they were so expensive, I didn't purchase the entire quantity needed. Pecorino cheese was over $8. So there is almost $20 for just the first two ingredients. Expect to spend between $30 to $40 on this dish depending on your area. The flavors in this dish are very mild as is to be expected with squash and chestnuts but I was hoping for more added flavor from the onions and garlic but they were really bland.

    Extending a theme of another reviewer for another Tyler Florence recipe, sometimes the preparation steps on the show do not match the instructions in the online recipe. He suggested Food Network needs to work on consistency between the two and I agree. Because the prep steps on the episode in which this aired did not call for possible use of immersion blender to puree the fillng mixture which was left "rustically chunky" in episode and is part of the charm of the dish. That said, made as on the episode the filling flavors are great.

    For those who gave this low marks simply because it showed up on "gluten free" search and has wheat based pasta as part of the recipe, I think they miss the point. I do a lot of gluten free cooking for celiac family members and the FILLING IS gluten free. Just eliminate the pasta part of the dish and use a gluten free lasagne substitute and you're good to go. Folks who do gluten free cooking regulary know to improvise in this way, although it is fair to say the recipe ought to be annotated for those who don't know better.

    i did a search for gluten free recipes and this is not gluten free! the recipe calls for all purpose flour, i was totally disappointed.

    I was looking for gluten-free recipes for my sister with celiac disease, and I don't know why this comes up in the search for "gluten free." It calls for flour in the dough recipe! I'm sure this is delicious because I've loved every recipe I've made of Tyler's, but it definitely doesn't belong in the gluten-free search.
