Ingredients
  • 4 pounds mussels
  • 2 tablespoons olive oil
  • 1 shallot, minced
  • 2 garlic cloves, shaved
  • 4 sprigs fresh thyme
  • 1/2 cup dry white wine
  • 1 lemon, juiced
  • 1 cup chicken broth, low-sodium
  • Pinch red pepper flakes
  • 1 tomato, peeled, seeded and cut in large dice
  • 1/2 cup roughly chopped parsley
  • 2 tablespoons unsalted butter
Directions

Rinse the mussels under cold running water while scrubbing with a vegetable brush. Discard any with broken shells. Heat oil in a 6 to 8-quart stockpot. Saute the shallot, garlic and thyme to create a base flavor. Add the mussels and give them a good toss. Add wine, lemon juice, chicken broth and red pepper flakes; cover the pot and steam over medium-high for 5 minutes until the mussels open. Toss in the tomato, parsley and butter, recover the pot, and steam for another minute to soften. The tomatoes should keep their shape. Serve with plenty of grilled garlic bread to sop up the broth.

    holy cow and mama mia that was fantastic! a few loafs of garlic bread, a big tossed salad and my family.. we really enjoyed it! the only problem we all could have had lots more even after i tripled the recipe!!! thank you so much.
    was all set to make this recipe for dinner, only problem was when I got to the store they did not have any mussells. Not wanting to change my dinner plans, I substituted shrimp for the mussells. I ended up being very pleasantly surprised at how good this recipe tasted
    Good recipe a tad on the bland side so I added a bit of kosher salt and it was better

    chicken broth for mussels??? really tyler? jeez. If you want your mussels to taste like chicken then yes sure go ahead and use chicken broth, OTHERWISE use either seafood stock, clam juice or a cup of water with a tbsp of salt. I grew up going to PEI where most of my family lives, and if i EVER was caught putting chicken broth in mussels I don't think they'd let back on the island!
    Ok recipe. Cooking directions were very good, but seasoning was a little bland. Will look for others with a bit more kick.
    Have been making this recipe over and over again. I added my own variation and added a touch of cream at the end, really added another dimension to it!!
    I have found that Tyler Florence delivers consistently good, solid recipes. I have found it hard to find any recipes I don't like from him. This is the tastiest and easiest mussel recipe I have found to date. My husband fell in love with mussels from this recipe and now cannot pass up any mussel dish on any menu, but still raves that this one is the best.
    I was looking for the perfect steamed mussells recipe and this was it! It was easy, fast, and so delicious. This is definitely the recipe to make if you want steamed mussells.
    This broth was really great! I added more garlic and shallots but I love my broth to have a stronger flavor. Putting this all together was super easy and very quick. I plan on making this again - next time for company!
    The mussels are excellent but the broth is simply the best! I subbed 1/3 small white onion for the shallot and chicken broth for the wine (I know, but I don't care for the taste) and it was the best seafood broth I have ever had. I ate almost 1/2 a large baguette just sopping up the broth while finishing up the rest of dinner. Then ate more with dinner and a bit more while cleaning up. This has definitely become a new favorite of mine!
    Make extra broth! Freeze it. Thaw, thicken it a bit and use it over pasta with shrimp - Wonderful! ! This is a keeper.

    I made 2 separate pots with this recipe, one for mussels and one with clams. Served with grilled baguette for sopping up the broth and plenty of white wine. My group of 12 friends couldn't stop eating (until it was gone)!
    this is the best mussel recipe I;ve yet to come across. the flavors compliment each other incredibly well and everybody i've cooked these mussels for were very pleased. to this day i still hear about how much they loved them and when can we have it again

    what a treat! Bits of garlic and tomato! The broth alone.... Yummy. they are right you going to need some crusty bread to sop that up. Some white wine and some good company yeah.. It's all good!

    There are so many recipes around for steamed mussels but this is the one to use. Throw in some clams and it doesn't get any better!
    This was my first time cooking mussels. They was very good, but not the best. The mussels were very tender, but needed a little more flavor. The remaining broth was excellent. Definitely need to sop up with some bread. Unfortunately, I'm on low carb, so I couldn't. The people that I cooked for raved about it.
    This is a very delicious dish that anyone can make. A short stop at the store will have you eating this dish in no time. The wonderful flavor combinations would please even the most timid palate. Serving this with a crusty bread really enhances the dish. Make sure that you have enough bread; once it is gone you will want more. The different textures are really an enjoyable experience. This dish is absolutly divine and is worth every minute in preperation and cooking.
    I made these without the tomatoes because one of my friends is allergic, and they were marvelous.

    I made this for valentines Day dinner...it was so easy and delicious! It tasted like it was right out of a restaurant on the coast.
    This recipe is so great. I cooked it for my friends and they all loved it. I'm going to try to add more stock next time and cook with angel hair pasta.
