    made this last night, and ate them tonight with dinner. was so delicious!! i loved that they were spicy! and the mint was great. i'm going to make this every summer. i love rice vinegar, being korean, so i would never use white vinegar! yuck! it's the rice vinegar that makes this recipe taste so asian and yummy. i did however use much less sugar than the recipe asked for.

    I don't think we've had anything quite like these and we loved them! We made them with the chicken and noodles and it was all a great combination of salt sweet and spice!

    I liked this recipe a lot. I think I would use regular vinegar next time, I did not like the taste of the rice vinegar.

    Loved them. Instead of the mint I used chopped cilantro to blend with the flavors of the Cold Sesame Noodles that I ate them with.

    The title says it all. Making pickles is no longer a mystery, just slice cucumbers & peppers, put in a bag with the stuff and viola, its done.

    This recipe was used as a side to the chicken of the same episode. Everyone loved it; and even though some remarked on the spiciness, they still went back for seconds. I'll definately make this again.

    I serve this with the Grilled Ginger chicken when entertaining, and it always gets rave reviews. I have altered it to be more low carb by substituting Splenda for 1/2 of the sugar. It's still wonderful.

    I found that these pickles were easy to make and vey tasty. I made them for a family function and they went very quickly. They were not over powering but very tasty.

    I made all the dishes from this one show. This was the only dish that wasn't completely gone at the end of the meal. Nothing bad, just not the dish I expected. Not at all like the marinated cucumbers I get at my favorite Thai restaurant.

    Absolutely Wonderful! Sweet and spicy~ very nice cooling lite addition to that whole menu. I added some thin sliced sweet onion to mine and it tasted fantastic!
