This Mojo is FANTASTIC on beef and chicken!

I based an entire Latin BBQ party on meat that was marinated in this Mojo. I used thinly sliced (asada style rump roast (beef doesn?t get much tougher that this and boneless chicken breast for the meat. The one thing I would caution about is ?over grilling? the meat. Because carne asada slices are so thin, they can, and will, get over done, and dry out, if you?re not careful. Nobody could believe that the carne asada was rump roast! It cooked up to tender and tasty. And, the chicken had a remarkable flavor that was like no other.

I have also searched for a great marinade for carne asada and this is definitely excellent. I did add about 2 ounces of Mexican beer to the Mojo, because it's not carne asada without it for me. I mixed it up the night before I wanted to use it, I don't know if or how that affected the Mojo. Thanks for a great recipe!

For those of you who encounter tough meat, one tip, is to make sure you cut the meat against the grain. It really makes a big difference. Hope that helps.

Good marinade. Salsa could use a little more kick. Good standby dinner that you can prep well ahead of time.

This is sooooo yummy. It was awesome w/ the flank steak. Had company over and they instantly wanted the recipe as well. So - good - doubled the marinade and am trying it w/ chicken too.
