Very good, I love the rosemary on the bacon. I use this technique when cooking bacon for other dishes, such as in salads.

These take an everyday meal and make it something out of this world. They are juicy and flavorful. I have tried it with blue cheese butter, sauteed mushrooms and onions

I changed mine a bit. I used 80/20 ground beef, nothing special. I sliced a 1/4" thick piece of garlic herb butter and packed the meat around it. I also melted a stick of this butter and brushed it on a kaiser roll and grilled the roll. I did the tomatoes, cheese, carmalized onions, rosemary bacon, and herbed horseradish mayo as instructed. I left out the mushrooms as I don't care much for them and used some baby spinach in it's place. This burger was the most fantastic burger I've ever had and the oven fries were great to. Here's a couple pics of my meal:

This recipe is worth whatever hassle you get at the butcher. In fact, my butcher had heard of using brisket and was more than happy to grind it for me. Burgers were flavorful and moist. I may cook them a bit more that Tyler suggested next time but they were a hit! Take the time to make the condiments as they are very good too!
