Made this today. Varied it a little, instead of serving on mashed potatoes, just dropped in 4 small potatoes, cut in bite size chunks at the end.
Also put in roux (2 tbsp flour at the end.

Best darn stew I've ever eaten! I didn't use the red wine, just added additional beef stock and instead of cloves I used allspice, but otherwise followed the recipe. It truly is The Ultimate!

This is the best beef stew in the world. I have tried it multiple times. And using pearl onions instead of chopped, gives it a more home-rustic look and taste. The only thing I would suggest is not to use the entire bottle of red wine because your stew will taste too much like wine and the flavors might get lost.

This is the best beef stew I've ever made, or eaten. Most stew has a lot of who tomatoes, and big chunks of "whatever." This recipe is fabulous and my guests agree!

Stew was absolutely delicious. Tyler Florence had two very similar stews and we went with this one.... odd thing was he didn't call for the onions to be put back in the stew after being marinated (while the other one did. We opted to put half the amount and they were delicious (very sweet, great texture. We recommend putting the onions back in at the same time of the carrots and peas.
Like others had said, the stew did not thicken as hoped. It needs lots of time to reduce. Do not cover during the last half hour. Next time we'll throw in some potatoes at the same time as the carrots to help it thicken.
Otherwise the stew was amazing. Great flavor. The beef was to die for. Very tender (we used a chuck roast because our grocery store did not have beef shoulder. The peas were a nice touch. The choice of wine is important because you will use the ENTIRE bottle. The vast majority of the liquid comes from the wine, so pick a decently good wine that you would actually enjoy drinking.
Great stew, definitely will make again, this time with potatoes.
