This was a disaster. I followed the recipe EXACTLY because I was new to the whole apple pie world and the crust was great, but the minute I cut into it the whole thing was swimming in liquid AND the apples were NOT cooked at all.

This recipe sounded so good, I really had to give it a try. But when I brought it up at dinner, my friend mentioned that she too had tried the same recipe and the results weren't so "ultimate" as the recipe boasts. She noted that too much liquid rendered out from the apples during cooking. And as I cut into the pie for desert I was surprised to find the apples floating in a pool of liquid.
Overall, the flavor of the caramel was lost with all the liquid. Although I was disappointed, I might try this again, but cut down on the apples (the recipe calls for too many and doesn't indicate a size (i.e. medium or large. I would also add quite a bit more flour and seasoning to the actual apple mixture and simplify the pie crust.

I have made it with your pastry and my own, the caramel sauce makes it the most delicious apple pie I have ever made and I have used your recommendations for apples and mine and either way it was a hit with everyone. I have used pink lady apples and fugi also and mix them up.

We have made this recipe three times. No more. The first time is was delicious. Unbelievably yummy! The last two times the pie was watery and the dough was impossible. We are desperately trying to recreate that first pie. Tyler - what did we do wrong????

I looked forward for weeks to making this pie, and I must say I'm so relieved I tried a practice run a few days before Thanksgiving. I'm not a big baker, but am trying to learn, so I used ready-made crusts as I didn't want to overwhelm myself. I didn't anticipate how much of a problem the caramel would be. Tried Tyler's way of caramelizing sugar and it didn't work - twice. Went online and got 3 or 4 completely contradictory recipes for caramelizing sugar (some said high heat, some said low; some said no sugar, some said only a teaspoon - they didn't work either. My boyfriend even tried his hand at it as I had been trying to caramelize the blasted sugar for hours and was ready to throw in the towel. All to no avail. Went back online (as by this point the apples had already been peeled and were waiting and got a simple, normal apple pie recipe. Still don't know what went wrong with caramelizing the sugar (even called our parents to get tips, so I may just try this again with store-bought caramel sauce. Fingers crossed it turns out edible.

the pie was good. i gave it three stars because the crust was not good at all. it wouldn't come together at all and i've been baking for several years now. i ended up going with the recipe i normally use. the filling was good, but instead of the lemon waterbath, i tossed the juice of one half of the lemon with the apple slices and added about 2 tbs. sugar along with the flour and cinnamon.
if not for the dough, i would have given this 4 stars.

I used this recipe with a slight twist to Tylers. I watched his show on the hunt for the ultimate apple pie recipe. He went from France to Washington State back to his apartment for his view of the best piece's of each pie he had seen , then to his own take on HIS ultimate pie. I had never baked a pie in my life before watching this show but was willing to give it a try . I made one change to Tylers recipe , i changed the red wine out and used a French apple brandy instead, i was not disappionted . The first piece out of the oven after cooling somewhat with vanilla ice cream was heaven on earth . I could not believe i had made this pie myself and it turn out so wonderful. When serving it warm to friends the next day all said it was the best apple pie they had ever had , Thank you Tyler for giving me the belief in myself to tackle the ultimate apple pie by Tyler . I love your show

Iliked the recipe but it was too labor intensive for me. I'm handicap and had to simplify things using store bought pie filling and caramel syrup. It turned out just fine and went over well with my family.
