I wanted to save calories, so baked much like you bake a custard. The fact it tend to be 'soft' in the middle if you make an entire cake, caused me to decide on the cup approach. You can eliminate the calories by not using the cracker crumbs.

However, if you want the crumbs, just put them on top - tasty.

Sometimes I top off with sugared pecans; bake, and then serve with warm caramel sauce - very good.

I used your recipe for the ultimate cheese cake. It was the best cheese cake recipe I've tried and I have tried many. The texture was light and creamy not dense like some recipies I have tried. I have received many compliments when making this cheese cake.

I cook regularly but have never attempted a cheesecake. I decided on this recipe to bring to a holiday party, and it turned out beautifully! I got so many compliments on how wonderful it was! However, the middle did not get quite set enough, although I followed the instructions to the letter. So heed my warning- cook about 15 minutes longer or increase the temp!!! Also, I substuted blackberries for the blueberries in the topping and it was wonderful.

My husband loves cheescakes so I wanted to surprise him for our aviversary. This was my first time making one and I was scared it wont come out right, I read all the reviews and changed the baking time to 350 and baked it 55 minutes ( I live in FL, since I didnt have an 8 inch pan handy I used a 10 inch one and I made the topping out of strawberries. The cheesecake came out so perfect, it was light and fluffy and tasted omg I cant even describe it was so good, my hubby said it was the best ever. I'm making another one for Christmas, cant wait. Oh and it was really easy too, even for me ( i bake like once a year

The cheesecake turned out great! It wasn't as firm as I would've liked, but I added extra lemon zest and a couple Tbsp of lemon juice and it turned into a great lemon cheesecake.

This is a keeper. I made this recipe the day before, and the cheesecake was amazing.

I didn't use the blueberry topping. I made my own with raspberries, blue berries, black berries, lemon zest, cinnamon, and honey.
