    The pork chops were perfect! For the apple and raison compote the only change I made was to add a little bit of cayenne pepper for a kick. This recipe was delicious and easy too!

    I never liked pork chops...until I tried these. I always knew there was more to them than the dried out little hockey pucks I've been served. THESE are what chops should be. They are so unbelievably delicious. I left the raisins out of the topping, but other than that, I followed the recipe exactly. Can't wait to make these again!!! Mmmm!!!

    Everything pork chops should be... and more. The chops are absolutely succulent - a rare trick for today's leaner pork, which is so often dry and flavorless, and the spiced apples and raisins are packed with flavor. This is a really special meal that's easy, quick, and just about idiot proof. Add roasted acorn squash and you'll be a rock star. Kudos to Tyler Florence.

    This recipe is fabulous! So Good!!! There is a ton of flavor, a nice change from bland pork chops, and super easy to make. The kids liked it too!

    EXCELLENT!!! Great flavors, only changed one thing... instead of cider I used apple butter while browning the apples and added just a splash of water to keep from being too think but the flavor was amazing!! Thanks for a great recipe!!! Oh and used rosemary instead of thyme because I was out the flavor was perfect!!!

    This recipe is the way to go with thick cut chops. That brine seasoned and tenderized them so well, you cut just about cut the pork with a fork. Everyone raved about it and I'll be using it again and again.

    My mother is a pork chop "snob and LOVED these!! They were the most tender and juicy pork chops I've ever had! I didn't use chops as thick as Tyler suggests and only made 3 chops, so I halved the recipe. The spiced apples/raisins/sauce were a little on the sweet/rich side, so I'll make a few alterations the next time, but that brine is primo!!!Excellent!!

    Amazing! I have made this so many times! So yummy! I serve with mashed potatoes and asparagus! Everyone that I have served it to wants the recipe!
