    I could only find cooked chicken apple sausage so I fryed it up, sliced it, and tossed it in the soup. I got all the flavor with none of the fuss of the meatballs. I also used 20 ounces of fresh tortellini. That was plenty. This soup has a ton of flavor which surprised me since it called for store bought broth. My family raved about it and it's my husband's new favorite. I will be making it again.

    This recipe is great. And yes, its 10oz of tortellini, not 2 lbs., and I also threw in a handful of Panko breadcrumbs in the meatball mixture. Very interesting soup, not boring at all. Anyone who couldn't make the meatballs likely put them in the processor too long.... For a great twist, throw in a can of chopped tomatoes, or a spoonful (or three! of pestoin the pot. Thanks Tyler. Oh, and your minestrone is my family's favorite!

    After reading all the reviews, I tried the following:

    I know the recipe calls for non-cooked chicken-apple sausage but I used already-cooked to speed up the process. I do recommend removing the casings but I did not blend everything together in my food processor. I broke down the sausage in the processor and transferred to a bowl and added the rest of the ingredients that way.

    I used 2 egss (instead of 1 and added about a 1/4 cup of breadcrumbs.

    Cook on medium heat and you should have little to no issue with the meatballs falling apart. If anyone has the Al-Fresco All Natural Brand at their supermarket, I thought these came out better. I used the Aidells Brand of sausage at first but that seemed to be harder to bind---it works but you have to play with it!

    All in all, it was an excellent recipe. It must be if my 12-yr old son who likes "nothing weird-tasting" ate it and actually asked for 2nds and 3rds!

    Recently I heard a judge on Top Chef say that if you are preparing a traditional dish, you should stick with the traditional aspect. Before I go out to look for chicken-apple sausage meat or whatever, I find it much easier to purchase a package of chicken thighs, roast them, shred the meat and put together a tasty, hearty and traditional chicken soup. Tyler's recipes are seldom "ultimate" and this one is definitely no exception.

    I made this soup tonight. I had read a lot of the reviews and noticed most people mentioned having trouble with the meatballs.

    I guess I goofed by buying Chicken sausages that were already cooked. I had watched the episode,...but still got the wrong thing. I remember when I saw the show that I wondered if he took the casing off (which I did with the cooked sausages that I used.

    the meatballs were not good.

    I ended up leaving them out of the soup and throwing them away.

    Maybe I will try again with regular ground chicken or some other RAW sausage :

    I made this soup over the weekend and thought it was fabulous. The thyme really adds a depth of flavor to store-bought chicken broth. I couldn't find chicken apple sausage, so I used sweet italian turkey sausage, with great results, though next time, I would make the meatballs a lot smaller. You have to use raw sausage here...I can see why so many are having trouble with the meatballs falling apart if cooked sausage is used.

    I added the other 1/2 of the garlic to the caramelized onions with good results. Thanks for the note about the amount of tortellini...I did feel 2 pounds was a bit much.

    I read many of this recipe's reviews before making the soup. I could not find the exact chicken sausage suggested. Instead I used chicken sausage with "italian seasonings" I found at Publix and added a finely grated apple to the meatball mixture. it worked just fine. The sausage cost about $5.00.

    I used a 19 oz bag of frozen tortellini (entire bag, and it also worked well for the recipe.

    Thanks to everyone who offered suggestions. We'll make this soup again.

    Tyler is great, BUT, the recipes are often different from the show he performs. He is so fast on the show, and the written recipe leaves out lots of ingredients. This one left out bread crumbs - it's really annoying!!!

    I made this with TJ's uncooked Sweet Italian Chicken Sausage & added 1/3-1/2 cup plain bread crumbs, mixed by hand and the meat balls came out fine. Would have liked to try with Chicken Apple but was afraid of the precooked type available. I also added extra carrots and diced zucchini. I would make this again. looking forward to the leftovers.

    When I made this soup, I felt like all I had done was boil premade tortellini in premade broth. Oh wait, I forgot about the agony of the "meatballs". I should have read these reviews earlier. All this recipe did was cause stress and make me feel inferior for not being able to make a simple soup. I think I'll steer clear of Tyler's recipes in the future.
