    Yes, this did take several steps, but it was well worth my time. I had doubts about the chestnuts, but in the end, that made it great.

    The chestnut/onion/celery part of the dish was simple but good. I was disappointed with the cornish hens. I thought wrapping each bird with 2 strips of bacon each was overkill. The whole thing ended up tasting more like bacon than anything else. I wouldn't use bacon at all if I remade this dish. It doesn't bring anything to the dish and steals flavors away instead. the sauce was good although it wasn't thick enough and had too much bacon fat in it.

    Far more complicated than I thought as I saw the show. Kind of like beef rouladan, expect with chicken. I think the recipe could be simplified for the more-or-less average cook.
