This was beyond good, it was magic. What goes into the ramakin is a glop of stuff, what comes out is a light, fluffy sponge cake covered with lemon flavored pudding. I had to tear up the recipe and throw it away to avoid weighing 500 pounds.

This is the dessert my 12 year old daughter requests the most. It is quick and easy and I usually have all of the ingredients on hand. It doubles well if you have more people to feed. I think it has just the right amount of lemon. I cook down some fresh raspberries with a little sugar and serve that on top. Quick and delicious - really a great recipe.

Substituted meyer lemons and reduced the sugar to 1 cup for a double batch. Served with creme fraiche whipped cream. Should have cooked them a bit longer. Made 6 six large ramekins out of double batch and cooked for about 40 mins. Needed another 5-10 mins but was still delicious.

I have never had a lemon pudding cake before so I did not really know what to expect. The description just sounded so good, I had to try it. It came out perfectly! Just like in the picture. Followed the recipe almost exactly (I used regular sugar and did not sift it or the flour just because I was in a rush and the taste and the texture were wonderful!

These cakes are delicious and look impressive, but are so easy to put together!
I made mine with regular sugar instead of superfine sugar and it didn't seem to matter. I also stored them overnight in the refrigerator - the cakes still came out of the ramekins beautifully, though they were maybe more dense than if I had not chilled them.

Outstanding......Phenomenal......Amazing..... there aren't enough words to describe this airy confection. Light, refreshing. NOT overly sweet or cloying. I served mine with vanilla bean creme fraiche. Tonight I'm serving with a blackberry sauce too.
My mother makes these regularly to rave reviews also.
So many desserts are just TOO much after a big meal. But this one is perfect.

This is a winner, Very refreshing, especially if you love lemon flavor as much as I do. Have made it twice following recipe and it's turned out great both times. I do think I will reduce the sugar a bit on the next try and see how that works as my preferences lean to tartness over.sweetness. Aside from the great texture, flavor and presentation this is also a relatively healthy dessert as others have mentioned. Neat thing is that when you serve it it looks like you went all out making a fancy dessert - true it's fancy but it's a breeze to prepare.

OK i'm giving this a good rating because everyone liked it but me. I'm not a tart lemon kind of person. I like the flavor of lemon but not the tartness in less it's lemonade. However, this is a really quick and easy recipe. the pudding part isn't really pudding for say but more like lemon meringue.
