I knew that I liked all of the ingredients of this sandwich, but I didn't anticipate how much I would love this recipe. The basil in the store looked bad, so I used a prepared pesto, which worked fine. I also added pepper, salt, and a smear of pesto on the mozzarella slices to lend more flavor. The last time I made this sandwich, I added some thin slices of prosciutto between the mozzarella and tomato slices--bellissimo!

I have done something similar in the past, with pre-packaged shredded mozzarella cheese. The ball or block of cheese offers a higher "chew factor" (which I LOVE than the shredded.

This sandwich is THE BOMB! This is the definition of true comfort food. For those that used store bought pesto, trying making it. It's so easy and the test is much better than store bought. I made it for my sister, and it is now our favorite sandwich.

This was such a delicious sandwich that my husband says he wants me to make it every week. It was so easy to prepare and the taste was excellent. Our kids loved it too.

So - I changed the receipe at bit. I don't like traditional basil pesto, so I went with a sundried tomato varity. This receipe is great.

Also try this with some smoked mozarella. It's outstanding.
