Ingredients
- 2 medium zucchini squash
- Salt and freshly ground black pepper
- Flour
- 1 egg beaten with 1 cup milk
- Olive Oil
- 12 slices whole-wheat bread, toasted
- Mayonnaise
- 1 large onion, thinly sliced
- 6 slices ham, fried
Directions
Slice zucchini into 1/4-inch rounds. Let stand until moisture forms on sides. Salt and pepper both sides. Dip in flour, then egg/milk mixture, then in flour again. In a deep frying pan or pot, heat about 2 inches of oil over medium heat. Fry squash until lightly browned on both sides. Drain well on paper towels. Spread toast with mayonnaise and make sandwiches with squash, onions and ham.

Make that squash stick to your ribs like a steak! Invite your friends over so you can use up all of that squash you grew!

When I first was invited to come taste the Georgantonis squash sandwiches I was a little hesitant accepting the offer. Man oh man, from the first bite until the last morsel, I couldn't stop raving about how unbelievably delicious this sandwich was! I even took one home to eat later but was too full. I took it out of the frig the next day and it was still full of flavor, not soggy and I enjoyed it just as much. Best tasting sandwich I've had in some time. Thanks to the three sisters I now have a new sandwich to serve my family.
