    My boyfriend LOVED this! I was a little worried b/c I could not find the arugula by itself. I found a little bit in a mixed spring salad but not enough for what the recipe calls for. Anyway, I also just used half and half b/c it was all I had. Turned out great anyway. Very rich! I also could not find shells that were large enough to use only six shells. I got some jumbo shells and stuffed like 20 of them or so. Was very good!

    Using manacotti and spinach were the only changes I made to this, but other substitutions/additions would probably be just as good.

    I made this alfredo sauce and served it with whole-wheat penne. I substituted light cream and margarine for the cream and butter and used skim milk. Add some peas and chopped ham for a quick main course. It was creamy and delicious!
