Vanilla sugar can be used to sweeten custards, puddings, ice creams, and cakes as well as coffee. Usually it is made with an empty vanilla-bean pod, its seeds having been scraped out for another use. The pod is then put into a jar of sugar, which gradually absorbs the vanilla essence. In this recipe, the strongly flavored seeds themselves are used for quicker results.

Scrape seeds of vanilla bean into a bowl and stir in sugar until combined well.

Note: Vanilla sugar keeps in an airtight container at room temperature 1 month.
