    This is one of the best, most refreshing summer salads I've had in a very long time. Very simple, yet delicious explosion for your taste buds. The lemon and the fresh mint are the key though.
    I had to double the recipe for a get together we had at our house, and it was gone so fast, I couldn't even get a second serving.
    You won't regret making this salad.
