I also couldn't find Anchos - so I bought Poblanos and roasted them and used that. Did not make the salsa that goes with it though. I honestly thought it would need some sort of herb or seasoning - there's only salt and pepper. However, I waited til the end and tried and it was surprised at how flavorful it was!

Very full of flavor for a vegetarian dish. I had never tried parsnips before and I just love them.
I couldn't find Ancho chilis at my supermarket so I just used Green chiles in the can. It was still very good.
