Ingredients
  • 1 1/2 cups flour
  • 3 tablespoons Dutch process cocoa powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 2 teaspoons vanilla
  • 1 teaspoon white vinegar
  • 6 tablespoons vegetable oil
  • 1 cup cold water
Directions

Preheat 350 degrees F.

Place the dry ingredients in a bowl. Make 3 small holes in the mixture. Pour the vanilla in one hole, the vinegar in another and vegetable oil in another. Pour water over the top and mix. Pour into a lightly greased 8 by 8 inch pan. Bake for 30 to 35 minutes.

Here's another iteration of the recipe above. Fat-Free Wacky Spice Cake (use applesauce instead of oil) Depression Era Recipe The substitution of applesauce for oil on a 1:1 ratio makes absolutely no difference Reduce the baking temperature from the usual 350ºF to 325ºF and reduce the baking time as well since a lower fat content leaves the mix more prone to burning. Adding back 1 T of oil does help with texture - your call. • 1 1/2 c. flour • ¾ c. sugar • 1/2 tsp. salt • 1 tsp. baking soda • 1/2 tsp. cloves • 1 tsp. cinnamon • 1 tsp. nutmeg • 1 tsp. vanilla • 1/3 c unsweetened applesauce • 1 tbsp. vinegar • 1 c. water • 1 T oil (opt.) 1. Sift dry ingredients into bowl and blend very well using a whisk. 2. Mix vanilla, applesauce, vinegar and water (and oil, if using) and pour over well-mixed dry ingredients. Mix well. This is an outstanding cake with the following adjustments: I double the cake ingredients to make a 13x9 cake. I replace water with very strong coffee I used melted coconut oil I used 5 HEAPING tablespoons of cocoa. Our family has made this recipe for years, although we increase the cocoa to 5 heaping tablespoons giving the cake a dark chocolate flavor. Use canola oil, stir in chopped pecans or walnuts and dust with powdered sugar. I used coffee instead of water and threw in some chocolate chips as some other reviewers recommended. I also topped it with store bought sour cream frosting and it was still super easy, not messy, and delicious.
