Ingredients

  • 1 3/4 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • Dash of salt
  • 1 egg
  • 1/2 cup brown sugar
  • 1 cup applesauce
  • 1 apple, peeled, seeded and finely chopped
  • 1/3 cup canola oil
  • 1/2 cup toasted walnuts, chopped

Directions

Preheat oven to 350 degrees. Grease 12 cup muffin tin. In a large bowl, combine flour, baking powder, cinnamon and salt. In a separate bowl, mix together the egg, sugar, applesauce, apple and oil. Combine the dry ingredients into the wet ingredients. Fold in the walnuts. Divide the batter into the greased muffin tin. Bake for 20 to 25 minutes

    Heavy. Followed recipe to the letter and they came out dense and gooey.Even used a scale to weigh the ingredients to be exact. Sub self rising flour a mistake???Flavor was bad, so i'm not trying again.

    Fun variations include using hazelnut oil instead of canola and adding hint of nutmeg and cloves, which always go so well with cinnamon. Try adding chocolate chips for more sweetness. I had to bake mine a little over 30 minutes actually to keep them from getting doughy but that's because I never use the full amount of baking powder to keep the flavor. Overall, the muffins turned out delicious!

    Simple recipe makes a very yummy muffin. I found that I needed to bake for 30-35 minutes to cook through and get lovely golden on top.
