    Heavy. Followed recipe to the letter and they came out dense and gooey.Even used a scale to weigh the ingredients to be exact. Sub self rising flour a mistake???Flavor was bad, so i'm not trying again.

    Fun variations include using hazelnut oil instead of canola and adding hint of nutmeg and cloves, which always go so well with cinnamon. Try adding chocolate chips for more sweetness. I had to bake mine a little over 30 minutes actually to keep them from getting doughy but that's because I never use the full amount of baking powder to keep the flavor. Overall, the muffins turned out delicious!

    Simple recipe makes a very yummy muffin. I found that I needed to bake for 30-35 minutes to cook through and get lovely golden on top.

    I made these muffins with a little variation: I used 3/4 a-p flour, 3/4 whole wheat flour, and 1/4 oats, instead of the 1 3/4 c a-p flour that it called for. They turned out okay, but not amazing. They're not very flavorful, and they didn't rise much. Very moist though, which I liked.

    I had most of the ingredients, but the apple sauce and apple, so, once I combined the dry and wet mixtures as directed, without the apple items, I poured in apple juice, until, I got the right texture for a scone, then, baked in my cast iron skillet, scoring the dough after the first ten minutes into wedges and baked for rest of the allotted time. Very easy recipe.

    Delicious! I'll try with all the listed ingredients, next time.

    Oh wow! I actually only had 3/4 cups of applesauce on hand so I used 1/4 apple butter with the applesauce to finish the recipe and used a Granny Smith apple since it was tangy. Also, I used to Wilton pan with six muffin cups so that they were larger. Add just a tiny bit of butter to melt and the taste is similar to an apple pie! Thanks, Emeril!

    Tried these with my daughter, maybe I had too much "help" but they turned out rather dense and heavy. Didn't rise very well, tasted OK but I'm not likely to make it again.

    I made these muffins twice and couldn't get them to cook correctly in the middle. The flavor was excellent and they are not too sweet which I liked but they were doughy in the middle both times I tried to make them. The first time I made them with a very large macintosh apple in the large muffin tins. The second time I decided to try the small tins and only half of the apple. I cooked them almost 30 minutes and they were still not done in the middle. Don't' know what I did wrong??? Maybe my oven is a little off?? I'm still rating them a 4 star because they have good flavor.
