    i made it but changed the dressing by using champagne vinagar instead if lemons.. i did not add cheese but every one loved it

    I have made this for all of my friends now and everyone loves it. I have some very picky eaters in my family and to my amazement, they do love this salad. I have used feta and goat cheese and both are excellent choices. I did not however, add the cashews as I felt it had enough texture without them. This is cool, refreshing and totally different. This salad will be a summer time staple.

    This salad is a little fiddly if you don't think to buy seedless watermelon (note to self... buy seedless watermelon next time! but it's so good, and surprisingly just as good the next day! I didn't change a thing (except I used cow feta instead of goat cheese as it was all I had.

    This recipe is delicious and great in the summer time. Add cashews and salt right before serving so they don't pull out the liquid from the watermelon. Goat cheese with herbs, the mint and crunch of the cashews (don't pulverize too much make the dish interesting. Used goat cheese with herbs. Sliced the onions very thin with a mandoline. Soaking the onions makes them more mild but I will soak a shorter time so they still have the onion flavor.

    I never would have thought to use watermelon in a savory salad. What a wonderful surpise, living near the watermelon capital of Texas (Luling we always have great farm fresh melons available all summer long. Trying to beat the heat on our 100+ summer afternoons I made this for a potluck and everyone that tried it loved it.

    I made this with a friend a couple months ago. We followed the recipe pretty much. I think we used feta instead of goat cheese. That is the great thing about this salad. You can come up with your own combo and make as much or as little as you want. I just made it tonight and put a splash of red wine vinegar as well as the lemon. I also used goat cheese this time. I also added fresh blueberries. I like the combo of the berries and goat cheese. I am usually not a fan of mint so I added just enough. It makes it very refreshing along with the lemons. I used cashews that were salted already so I didn't really need that much sea salt. I would just taste as you go for you palate.

    I love this recipe! I loaded it with mint and lemon juice and topped it off with some high end goat cheese. I was very impressed! I would have never came up with this combination on my own. Thank you for this recipe! I'm excited to have it again!

    This is great. Using lemon juice instead of wine vinegar or some other acid really made the difference. Plated the salad and then added the cheese ( I used Feta so it would not break down in the leftovers. We have fresh mint growing year round.
    Served it with Giada's Whole-Wheat Spaghetti with Lemon, Basil, and Salmon.

    I've made this twice now, once with the goat cheese, and once without. In all honesty, I think I preferred it without the cheese, but it's great either way. I love the lightness of the cucumber and watermelon, as well as the simplicity of the dressing. I agree that it's easier to just do everything to taste. I disagree with the reviewer who said the onions ruined it--I thought they gave the salad a nice bite. The cashews added a nice crunch, but what made it for me was the mint. The mint was perfect.

    I'm not a cooker-man as my son would say, but I managed to make it and it turned out awesome! I was concerned about measurements noticing that there weren't any. So what did I do? I emulated my wife in the kitchen as she cooks; I eyeballed everything while making sure that I made enough for three people. And there was! One small suggestion: Patting dry is not necessary for the onions and, the watermelon is, well, made of water.
