Very good salad. We made the dressing also. The nice thing is the dressing doesn't over power the rest of the salad including the lobster.

I'm too chicken to boil a lobster, so I did this with crab and shrimp. It was outstanding. The dressing was a snap to make and really complemented the shellfish.

Sometimes it's hard to differentiate one cobb salad from another, but this one is a clear winner. Straining the egg whites and yolks seperately gave a pleasingly smooth texture that matched well with the avacado, lobster and tomato, and contrasted nicely with the green beans, bacon and cheese in both texture and taste. The dressing was great and did not overpower the sweetness of the lobster.
