Holy cow! This is such a simple salad that comes together in a pinch. I did a few things differently: I used honey instead of sugar (and cut it back a bit as my carrots were nice and sweet and used baby spinach. I just threw the baby spinach in with the cooked carrots and threw in the whisked "dressing", mixed it all together and then put it in my eating bowl. So easy!
This is a healthy and very flavorful salad that will be definitely making it's presence in my kitchen!

just a note...for anyone strictly observing Passover, you will need to omit the cumin as it is considered kitniyot, otherwise a great recipe!

This recipes gives an interesting and different different. Surprisingly, my veggie hating boyfriend even liked it (probably the sugar :. It was quite easy to put together. Next time I think I'd like to try leaving out the lemon juice and using all orange juice instead, but it was good as is.

This dish was pleasing to the eye and the palette. I would recommend really studying the different ingredients, if you don't do that already, because I found the recipe difficult to read-- my only complaint: it could have been written differently.

I used aspartame instead of sugar and it still came out delicious. I substituted one 10-ounce box of frozen spinach. As one previous reviewer suggested, I would use more spinach. This is terrific and very, very easy!
