    Delightful accompaniant to any brunch menu. The carmelized sweet onion
    (I used purple onion and the bacon sandwiched between the shredded
    potatoes was divine!

    I loved this dish. Very easy to make if you use a Mandolin, and it's such a nice change from the usual mashed or baked potato.

    This is really an easy recipe. A Mandolin makes the preparation a snap. The cake goes with just about everything and is deffinitely worth the effort.
