This is my go-to mashed potatoes side dish. I love how green they become by adding the spinach/watercress puree--it's a great way to sneak in the high-vitamin fresh greens. Even when the meal isn't Asian in theme, I use this recipe and omit the wasabi (but it's so good in there. The only change I've made over the years is to add an entire head of roasted garlic to the ricer or food mill when I'm ricing the potatoes. And, on one occasion when watercress was out of stock in the produce section, I substituted arugula for the watercress. It turned out just as good.
