    I used feta cheese. Turned out great. The chicken served five and I added to the mushroom sauce. great flavor. My family loved it. Definitely a weeknight favorite.

    My family loved this recipe. I added some minced garlic to the goat cheese mixture and boned and stuffed the chicken the night before. When I came home from work the next day the meal was ready in a flash and the presentation was awesome. You have got to try this.

    Wonderful flavor and very impressive presentation. I was fortunate to have a butcher de-bone this for me. The first time I attempted it, the "butcher" cut it in half for me and sent me on my way to de-bone it for myself. I guess, depending on your area, morel mushrooms may be easy to come buy, in my area, they were $20.00 an ounce, so I substituted a variety of mixtures and it worked out just great. Even for a week night dinner, just get it butterflied and de-boned first and have a great dinner, that's quick and elegant.

    I made this dish the other day and it was really great. A little bit of work but well worth it. Great flavor and the mushroom sauce was out of sight.
