Wolfgang is an expert at developing delicious flavor combinations. I have had Pad Thai at many restaurants and found this to be just as good or better! I liked the citrusy flavor, but you could cut back on it if you prefer. I couldn't find tamarind paste but so I used tamarind nectar and let sauce #1 reduce for a little longer. I used lime zest for the lime leaf. I did cut back on the sugar, using 1/4 cup of packed brown sugar in place of the palm sugar.

I found this to be delicious,, with deep flavours that were very satisfying. Easy to make - the various sauces I made at my convenience - putting it together took a very short time. There was more liquid than I had expected - is this usual? Other recipies i have tried are considerably more boring. This is close to the 'real' thing, I think!

This recipe has the potential for five stars. The flavors are wonderful, except for the overwhelming sour/acid notes. Reducing the amount of lime juice is probably what will "fix" this recipe. I will try again.

Excellent recipe! I've had a lot of pad thai at restaurants and this one is just as good if not better.
