    Very tasty recipe. I added green onions to the mashed mixture, around 1/4 cup...it made it even better!

    I made this for my family (I have young children, and everyone loved it. It was pretty easy. I used a melon-baller to remove the flesh of the potatoes, and that worked very well. Remember that olive oil smokes if you heat it too high, so lower the temperature to about medium to med-high (instead of HIGH in the recipe before sauteing the ham and mushrooms. I enjoyed this, and will be making it again.

    I loved this show ! All the little tips on cooking potatoes were great. The very next day i made these twice baked potatoes, they were easy to make and so hearty that i served them with just a spinach salad and called it supper ! They look really nice on the plate also.

    This is a really good recipe, especially the tip about scoring the top--it makes for a great presentation. I omitted the ham and mushrooms and added crispy bacon and chives instead.

    I prepared the stuffed twice-baked potatoes the other night, and I found them to be rather tasty and not overly difficult to prepare. I found it useful to prepare all of the components in the begining and used most of the time the potatoes were in the oven the first 45 minutes to get everything set up. Do not actually cook the ham and mushrooms until you pull the potatoes out of the oven to cool, that way they are nice and hot when you mix them in with everything else.

    The recipe is definitely good, but there is a lot of prep work to do, so if you want to sit back as the potatoes cook, this is not the recipe for you. If you do not mind working a bit, I would suggest going for it.
