Chef Wolfgang, this is the closest recipe to a Smith Island recipe I have found so far. Thank You! Trust your expertise and finesse in Baking with Chocolate. Merci...

I love this cake; it is a lot of work but worth it. If you are making this for the first time it says to cut it in half I cut it long ways. I cut mine so that I had (8 6x18 pieces. Like most of you who commented it was too thin to cut horizontal. I also found that it burns easy so I am not sure if you can wait to cook each cake separately. Could I set the batter aside that long to cook each cake individually? I am too scared to experiment. I always feel safer cooking them all at once and rotating the pans to keep them from burning. I would love any feedback on this question. I also noticed that there were questions about setting up the moose to not be runny; I find that if you add a couple tablespoons of powdered sugar to your egg whites as they start to come together, it will thicken the whites and help prevent them from separating. Set a day aside and make this cake!

This was the richest most amazing chocolate 'overload' cake me and my family have ever had. Quite a success with the whole family and neighbors and friends ...

My mousse is so watery....why why why??!!??
I followed the receipt and have even added more whipped cream...it's being refrigerated as I type, but it is still runny! How can I salvage this?? The cake has to be made by tomorrow for my friend's birthday......SOMEONE pls help!!

Simpy the best cake I have ever made. My family and friends loved it. Wish I could see the video, just to brush up on techniques. Thanx, Wolfgang.

This ended up being a 12 layer chocolate cake, but it did not matter. The taste was out of this world. Since making this I have not tasted anything that even comes close. it really is not that hard to do it just takes patients. I will definitely make this again.

I followed the directions for the cake exactly as printed here. I attempted twice and each time the cake came out so thin it was unusable. The second attempt I seperated the batter between only two of the baking sheets and it was slightly better. Not sure what I did wrong but I was very frustrated as I followed the directions and measurements to the T.

this is a tedious recipe and you need a baker's sheet pan to pull it off correctly, but it is worth every minute

I made this cake for my Birthday party and it was the best cake I've ever tasted. Everyone at the party said the same and most of them went for seconds! It certainly isn't the easiest cake I've made, but the effort was well deserved. I absolutely love it, love it!
