I had this in his new restaurant in Washington D.C. I absolutely love it. It is the best appetizer, it is a great use of beets.

This recipe is 5 stars all the way. It has a lot of steps, but what a fabulous presentation and taste. I've made this recipe many times, and my guests always rave about it. Had it for Thanksgiving last year as a first course and it was delicious. Make it, you'll love it, even those that don't care for beets were blown away. Go Wolfgang!!!
