I made these for a graduation party in the summer and they were gone before I knew it. The ingredients were so fresh and healthy -perfect for the summer party. Make sure to salt and pepper the roasted red peppers before rolling to bring out the flavors. I recommend roasting your own peppers so you can choose how thick you want the slices. Also it is probably cheaper to buy a whole round of mozzarella cheese instead of the balls, and then you can cut the cheese to fit the peppers. Definitely making these again when I have parties.

Super easy to make!! I soaked the cheese in balsamic and a pinch of salt before rolling them. Tried a lot of different combos and used a spinach leaf instead because I'm not crazy about whole a lot of basil in one bite. Great snack!

I love this idea...we have tried lots of different combos and usually drizzle an olive oil/balsamic mixture on top. People love that they are easy to eat...one bite and done. Also great cause they are made ahead of time.
