    I absolutely love this recipe, and always get rave reviews when I make it. I have always had issues making spanish rice, but following this recipe will guarantee perfect rice. Only thing is I cannot find alcaparrado in my town, so I just used chopped up olives, nor can I find cubanelle peppers. I do cut back on the salt, because the olives tend to be salty as well, otherwise everything is perfect. Thanks Daisy!

    I have been making this since the first time I saw Daisy make it on her own show a few yrs ago. Everyone loves this!! The corn and chicken broth give it a wonderful layer of texture.

    Daisy used achiote oil! I remember my grandmother always had a pot of achiote oil going and my aunts used to take oil back to their homes. Growing up in the States, achiote was not very common and my mother wasn't able to find any so we had to settle with Sazon. After watching this show I went out and found some achiote seeds and was able to replicate the recipe and now I can't live without it.

    I made along with Pulled Pork and Black Beans for a Themed Dinner Party. It was a big it. I always fear over salting food. So I cut the amount of salt in half and this was fine.

    Finally made this without a lot of expectation. I'm Puerto Rican myself...but oh oh oh!! The achiote oil is worth the little effort it takes and the color and flavor it gives the rice is hard to duplicate and it was so fluffy too. I called my mom and said now I know how to make 'spanish rice'. Go Daisy!!

    I love this rice and so did my family.
    I forgot the corn so I added mixed vegetables, it was great.
    I love everything Daisy makes, and every dish I have made from your cooking show is a hit.

    I love love her show. I love this yellow rice because it has so much flavor. This dish has become one of our favorites. I can't wait to see more shows.
