Well, to start, I am a coconut lover and my husband is SO NOT! I thought I'd ease him into the flavor of coconut and made this dish thinking he'd probably not like it, but thought it was worth a try. I didn't tell him what ingredients I put in it and he thought it was just fabulous. This recipe is all around GREAT! The fish is tasty and the rice is wonderfully flavored without being overkill. I'd say to cook the rice a tad longer than suggested, but YUM! Love this recipe!

EWWW! Yuko! Both the fish and rice were disgusting. I cooked the rice for about 40 min and it was still crunchy. No flavor from the coconut milk or mango. The fish was ok but needed more salt and spices. From now on I will stick to Paula's recipes and her son needs to stick to being her assistant.

I took your Idea of mango and used mango and peach salsa over the marinated fiish in orange juice and hot sauce.. I put the fish in the oven covered with the mango and peach salsa yum.

I followed Corinne's suggestions of jasmine rice, frozen mangos, and broiling the fish with additional marinade, I added a dash of garlic salt and cajun seasoning to the marinade. It was great...no compliants!

The rice not done in 20 mintures then I put more 3/4 cup water(added about 10 more mintures it was done perfect and I used pineapple substitute mango.

what a great meal.
we added a lot more spice (more hot sauce, cayenne pepper, black pepper, capers and garlic cloves. i pan seared the fishies instead of grilling (only because my griler didn't want to get off the couch. it took maybe 5 minutes on low heat. still wasn't "zesty" but was great and enjoyed by both of us.
the rice....wow. i'm in love. this was like no rice i have had before, quite interesting, and i already have a request to make this exact meal for some guests 3 days from now!

When I cooked the rice, it was done and perfect in 15 minutes. My husband and I couldn't get enough of it - absolutely delicious! ( I did add a 1/2 Tbsp of butter to it when it was done, like Paula did - she was a bad influence on me :
The fish was great too! I put mine in my over broiler for about 10 minutes instead of grilling. It was flavorful and also a keeper! Thanks Paula (and Bobby - y'all did it again!!!

Paula never disappoints. I didn't have the time or the ingredients to make the coconut rice, but the fish was great on its own. So easy to make and very flavorful. This will quickly become one of my favorite recipes!
