    I made the Tilapia and rice dish the other night for friends. It was so easy and quick. I marinated the fish for about 4 hours and it really absorbed the flavors. I didn't grill, instead just fried in the pan. The only change I made after reading the reviews was to add red pepper flakes to each fish just before cooking. My friends took home the recipe.

    The rice was a bit disappointing. I didn't taste the coconut at all. I did like the mangos. The only change I made to the rice was to add cilantro to give it some color. The rice was good but I thought it would have more flavor!!

    The way that Paula was going on and on about the fish on her show with her son.. I had to go out immediatly and try this recipe, my first with Paula. How disappointing!! Absolutely no flavor to the fish and the rice is just gross!

    After making this recipe I found the rice the be a little bland, especially when paired with the zesty tilapia. The second time I made it I double the amount of hot sauce and orange juice (as mentioned before, the hot sauce only provides flavor and doesn't not make the fish too spicey, and reduced the amount of oil. I let the fish marinade 2 hours instead of 30-60 mintues. I pan fried the fish (no grill available and it turned out amazing! I topped the fish with a sour cream & wasabi dip (1/2 sour cream to 1 tsp wasabi paste- found in Asian food isle. I opted to exchange the mango coconut rice for a lime & cilantro rice cook in water and lime juice instead of milk. It gave it a little bit more bite and the citrus in the rice comlimented the orange and ginger of the fish quite nicely.

    Mine did not turn out well at all. My family generally loves tilapia and I had really high hopes for this but mine was not zesty nor tasty. Sorry.

    Wow! Here was a recipe without "2 sticks of butter" or sourcream...and" ya know what?" it was perfect! Lite and delicious, and I loved the rice with it. The next time I make it though, I will "SPICE IT UP!" a little more ex: Ginger....Oh n of course, I used much much less oil.

    This dish is very easy to make. It wasn't terribly zesty, but I eyeballed the hot sauce. It was very light and delicious. I paired it with rice pilaf and green beans.

    This is a very flavorful way to prepare tilapia. I halfed the salt in the recipe and was pleased with the results. Will make this again. Didn't like the rice as much, though the mango was really good. I think the coconut milk may bit over the top. But don't be shy about using lots of mango as it's quite tasty in the rice. I used frozen mango (thawed it first.

    I'd been banned from preparing fish ever again because of my many disasters in the seafood arena. I gave it one more shot because this one looked so good. It was better than good and so easy that even I couldn't destroy it! Very moist and flavorful. I marinated for 45 mins and used a non-stick indoor grill pan. I used jasmine rice for the Mango Coconut Rice recipe.

    I prepare the fish according the recipe and several wrinkled noses appeared. I did just use a frying apn, not having a grill.

    The 3 picky eaters loved it (7, 8 & 66 - all male!
    Not so the Rice but who cares! the fish was a hit! Even with my husband...no garlic or basil or cilantro!

    The fish really absorbed so much flavor from the marinade in the two hours I had it in the frig...the only change I made was cutting the salt amount in half...I have low tolerance for salt and this adjustment seemed perfect for the fish. I did not try the rice, no coconut milk in my pantry, however, it sounds the perfect accompaniment to the fish. By the way, the heat from the hot sauce in the marinade is not apparent at all if anyone has concerns it might be too spicy, it merely adds flavor.
