Ingredients
  • 1 loaf unseeded and unsliced Jewish Rye bread
  • 2 pounds corned beef, sliced (see Cook's Note)
  • 12 ounces Russian dressing, recipe follows
  • 12 ounces sauerkraut
  • 12 slices Swiss cheese
  • 4 tablespoons butter, melted
  • Russian Dressing:
  • 3/4 cups mayonnaise
  • 1/4 cup plus 2 to 3 tablespoons chili sauce
  • 2 tablespoons sour cream
  • 2 teaspoons chopped curly parsley leaves
  • 1 tablespoon plus 1 teaspoon minced Spanish onion
  • 1 tablespoon plus 1 teaspoon minced dill pickle
  • 1/2 teaspoon fresh lemon juice
  • 1/2 teaspoon grated horseradish
  • 1/4 teaspoon Worcestershire sauce
Directions

Preheat oven to 350 degrees F.

Sprinkle the corned beef with a little water, wrap it tightly in aluminum foil and steam it in the oven.

Meanwhile, put the whole loaf of rye bread (unwrapped) into the oven. Bake the bread until the crust is very crunchy, about 15 minutes. Set the bread on the counter and let it cool for about 5 minutes.

When the rye bread is cool enough to handle place it on a cutting board. Hold the bread knife at a 45-degree angle and cut 12 slices.

Take the corned beef out of the oven and unwrap it. Spread each slice of bread with Russian dressing. Layer half of the slices with corned beef, sauerkraut and slices of Swiss cheese, then top the sandwiches with the remaining slices of bread (dressing-side down).

Heat 2 large heavy skillets over medium heat. Brush the bread with butter. Put the sandwiches in the pans and weight them with a lid or heat proof bowl topped with something heavy. Cook until the first sides are crisp and golden about 7 minutes then flip the sandwiches. Cook until the second sides are also well toasted and the cheese is melted. Lift the sandwiches onto a cutting board. Cut each in half diagonally and serve.

Cook's Note: Buy high quality corned beef for this recipe. Avoid corned beef that is very lean.

Russian Dressing:

Combine the mayonnaise, chili sauce, sour cream, parsley, onion, pickle, lemon juice, horseradish and Worcestershire sauce in a bowl and mix well. Yield: 2 cups

    So good!
Zingerman's makes the greatest bread, the best corned beef, the best quality cheeses and sauces...I dream of this sandwich, so much that I have ordered their Reuben kit online. $135 delivered for a size that makes 4 sandwiches, fixings and their "magic brownie bites". LOL...NOT what you are thinking. At least it is cheaper than flying to Ann Arbor Michigan.
Totally Tasty! If I told you what meat I used I would be shunned, so I won't, but the dressing was delightful!!!
what a fantastic Reuben sandwich. the taste is just so good that making a Reuben Sandwish any other way is just wrong.
We have always enjoyed a good Reuben Sandwich, but I tend to shy away from the Thousand Island dressing, just way too sweet for me. This Russian Dressing is delicious!! I agree with other reviewers about making the dressing ahead of time. WOW! when those flavors have time to marry, it is even better! I used it the next day as a dipping sauce for French fries. It is really, really good! I made these last week & my husband took one to work and shared 1/2 of his sandwich with his boss who has requested that I make more, which I will be doing tonight! Can't wait, thanks Food Network!!
I was looking tonight for the best Reuben Sandwich on the planet. Well I found it. The combination between the Russian dressing, corned beef, Swiss cheese, Sauerkraut, while holding it together with 2 pieces of rye bread was the bomb.. I am not a Russian dressing kinda of person, but after eating this sandwich, it really has gotten my attention. Thanks Food Network for this recipe.
Normally not a huge Reuben fan but wife is. Excellent sandwich became a Reuben lover after this, will make again. Dressing was very good after the first hour of melding in the refrigerator but day 2 the flavor became magical. I was using it on corn chips and whatever else I could put it on, amazing.
Perfect dressing!!! Made it EXACTLY as recipe stated! I was completely impressed! YUM! Soooo glad I didn't buy store bought!
A- maze-ing. The dressing is the best ever! No more bottles for me.
Insanely tasty! I wouldn't change anything about this recipe. I made these for dinner. YUM YUM! This is a definite keeper recipe!
This has got to be the best dressing ever.
I used to work at Zingerman's, making these sandwiches, back in '02. This recipe is a scaled down version of what they use in the deli, and it is PERFECT! If you want to really do it right, use Sy Ginsburg's corned beef. Hand slice the rye so the slices are between a regular sandwich bread slice and a Texas Toast slice. Use a TON of dressing on BOTH slices of bread. Serve with an extra side of the dressing for dipping. I think it's a little light on the parsley, honestly, so I add more. If you wanna little extra something, add 1/4 tsp. Sriracha (Rooster sauce! This is also amazing on pumpernickel bread, or substituting cole slaw for the sauerkraut. Check out Zingerman's website for other versions on the deli menu for inspiration. (I use a copy as a recipe book!
This is, by far, the best reuben recipe. The dressing really makes it five-star. Don't skimp out by buying store bought Russian dressing. You definitely won't be sorry you took the five minutes to whip up a batch of homemade!
My original plan was to just buy some thousand island dressing for this sandwich but after reading others reviews about how good the dressing was, I decided to go for it. I am SO glad I did. This dressing is amazing. It is well worth the little effort it takes to make it. This is the best dressing I have ever had for a corned beef sandwich. I could eat it from the bowl, it's that good! What a yummy sandwich!
OMG....I about inhaled this sandwhich! (truth is I didn't even make the sauce....I used thousand island dressing to save time, but had I made the sauce too.....who knows, I may have needed resuscitation!
Excellent dressing! I am making again today to go with my yummy beer braised corned beef, kraut and homemade New York Style Jewish Rye which I do put caraway seeds in because we prefer them. My husband could eat this everyday if I would let him lol. : Without a doubt this is the best dressing for corned beef I have ever made or had out! You will be hooked!
The Russian Dressing was quite simply AMAZING! Once you have tried this recipe, you will not want to use bottled dressing ever again.
DO NOT CHANGE ANYTHING!! I made these for a Christmas Eve supper for six, from the recipe as written. Around the table, you could hear only "mmmm" and "ahhhh." I love a Reuben Sandwich--it's a standard I use to evaluate a deli restaurant--and these were as good as or better than any establishment can offer. I beg you, do not use store-bought Russian Dressing, because this one is TO DIE FOR. It is worth every chop and dice and measure. In fact, I have some leftover dressing reserved for a wedge salad that I'll make in a couple of days. Use quality rye bread also--worth every penny. I can't rave enough about these fantastic sandwiches. Till next time...!
This Reuben is without a doubt one kick a## sandwich! Followed recipe to a tee and from the thick hand sliced Rye, to the homemade dressing. My guests were blown away. Zingerman's rules!
Totally awesomw....but.....I changed the dressing a little. I only used 1/2 cup mayo added 1/4 cup more sour cream....both of which were Lite. I also added about 6 geen olives, chopped. I also added about 1 teaspoon of sweet pickles diceed. I guess this was sort of a combo Russian/Thousand Island....anyway....greaaat!!
    Fantastic!!!!!!!!
I have to say I have had a Reuben or two in my life. This was truly one of the best and I made it!! As a suggestion, If you're going to make this do it the right way. Buy your ingredients fresh and straight from your local deli. My deli always gives me a little side of Russian dressing, but now I can finally make my own!! Thank you!
I admit...I used pre-sliced rye bread. But, the sandwich was great. I made homemade corned beef using Alton Brown's recipe. You'll never use store bought again once you make your own. The dressing was great as well. I used a George Foreman grill to brown the sandwiches to perfection. You won't be disappointed.
Best Reuben I've ever had. I was impressed with the Russian dressing and it was so easy. Made this for friends and they went nuts!
I live in Ann Arbor and this dressing is the real deal. I actually compared this dressing and Zingerman's side by side one day when I was a bit bored. Spot on.
This is such a good Sandwich recipe.
The Reuben is such a great sandwich to begin with and the little effort that it takes to whip the Russian dressing together,"I believe" makes this sandwich. You will never be satisfied with store bought again.Just make certain that you drain the (good)sauerkraut very, very well, or you will be swimming in the juice. Good quality bread, corned beef make this a winner. Weight it done in the pan, grill that bread nice and dark, add a few chips. Don't turn that burner down cuz you are going to want another one in about 4.5 minutes.
Having grown up on this sandwich I can tell you, this is the only way to make a ruben.
I can't stand the thought of corned beef and sauerkraut but my husband begged for homemade Reubens and they were a hit! He said it was the best thing I have ever made. I did buy the sliced jewish rye but it worked great. The russian dressing was awesome too but I am sure to go the quicker way thousand island dressing would be great too!
This is by far the best Reuben my husband and I ever had either at home or out. The Russian Dressing recipe is perfect!
Better than all the rest. My husband is a HUGE Reuben Sandwich fan and he loved this. Restaurant quality.
