Zingerman's Reuben Sandwich

Ingredients
  • 1 loaf unseeded and unsliced Jewish Rye bread
  • 2 pounds corned beef, sliced (see Cook's Note)
  • 12 ounces Russian dressing, recipe follows
  • 12 ounces sauerkraut
  • 12 slices Swiss cheese
  • 4 tablespoons butter, melted
  • Russian Dressing:
  • 3/4 cups mayonnaise
  • 1/4 cup plus 2 to 3 tablespoons chili sauce
  • 2 tablespoons sour cream
  • 2 teaspoons chopped curly parsley leaves
  • 1 tablespoon plus 1 teaspoon minced Spanish onion
  • 1 tablespoon plus 1 teaspoon minced dill pickle
  • 1/2 teaspoon fresh lemon juice
  • 1/2 teaspoon grated horseradish
  • 1/4 teaspoon Worcestershire sauce
Directions

Preheat oven to 350 degrees F.

Sprinkle the corned beef with a little water, wrap it tightly in aluminum foil and steam it in the oven.

Meanwhile, put the whole loaf of rye bread (unwrapped) into the oven. Bake the bread until the crust is very crunchy, about 15 minutes. Set the bread on the counter and let it cool for about 5 minutes.

When the rye bread is cool enough to handle place it on a cutting board. Hold the bread knife at a 45-degree angle and cut 12 slices.

Take the corned beef out of the oven and unwrap it. Spread each slice of bread with Russian dressing. Layer half of the slices with corned beef, sauerkraut and slices of Swiss cheese, then top the sandwiches with the remaining slices of bread (dressing-side down).

Heat 2 large heavy skillets over medium heat. Brush the bread with butter. Put the sandwiches in the pans and weight them with a lid or heat proof bowl topped with something heavy. Cook until the first sides are crisp and golden about 7 minutes then flip the sandwiches. Cook until the second sides are also well toasted and the cheese is melted. Lift the sandwiches onto a cutting board. Cut each in half diagonally and serve.

Cook's Note: Buy high quality corned beef for this recipe. Avoid corned beef that is very lean.

Russian Dressing:

Combine the mayonnaise, chili sauce, sour cream, parsley, onion, pickle, lemon juice, horseradish and Worcestershire sauce in a bowl and mix well. Yield: 2 cups

OUTSTANDING! Although a lot depends on the corned beef and sauerkraut you use, this method and most particularly the sauce, makes it fantastic. This is the best sauce I've tried. Truly flavorful, and adaptable to many other options. I made a double batch, and we adapted garlic in some, adobo sauce in another, and dill just to name a few. I also kept an amount out and used granulated onions and dill relish from a jar, but,  honestly, they weren't as flavorful as mincing fresh onion and dill pickles. I have been searching for the perfect reuben recipe and THIS IS IT!  If you want to make it right, do NOT use deli corned beef for this- take the time to make home made corned beef- it will make all the difference in the world.  The sauce is outstanding as well!  I grilled them in the panini press..... We have always enjoyed a good Reuben Sandwich, but I tend to shy away from the Thousand Island dressing, just way too sweet for me. This Russian Dressing is delicious!! I agree with other reviewers about making the dressing ahead of time. WOW! when those flavors have time to marry, it is even better! I used it the next day as a dipping sauce for French fries. It is really, really good! I made these last week &amp; my husband took one to work and shared 1/2 of his sandwich with his boss who has requested that I make more, which I will be doing tonight! I was looking tonight for the best Reuben Sandwich on the planet. Well I found it. The combination between the Russian dressing, corned beef, Swiss cheese, Sauerkraut, while holding it together with 2 pieces of rye bread was the bomb.. I used to work at Zingerman's, making these sandwiches, back in '02. This recipe is a scaled down version of what they use in the deli, and it is PERFECT! If you want to really do it right, use Sy Ginsburg's corned beef. Hand slice the rye so the slices are between a regular sandwich bread slice and a Texas Toast slice. Use a TON of dressing on BOTH slices of bread. Serve with an extra side of the dressing for dipping. I think it's a little light on the parsley, honestly, so I add more. If you wanna little extra something, add 1/4 tsp. Sriracha (Rooster sauce! This is also amazing on pumpernickel bread, or substituting cole slaw for the sauerkraut. My original plan was to just buy some thousand island dressing for this sandwich but after reading others reviews about how good the dressing was, I decided to go for it. I am SO glad I did. Excellent dressing! I am making again today to go with my yummy beer braised corned beef, kraut and homemade New York Style Jewish Rye which I do put caraway seeds in because we prefer them. DO NOT CHANGE ANYTHING!! I made these for a Christmas Eve supper for six, from the recipe as written. Around the table, you could hear only "mmmm" and "ahhhh." I love a Reuben Sandwich--it's a standard I use to evaluate a deli restaurant--and these were as good as or better than any establishment can offer. I beg you, do not use store-bought Russian Dressing, because this one is TO DIE FOR. It is worth every chop and dice and measure. In fact, I have some leftover dressing reserved for a wedge salad that I'll make in a couple of days. Use quality rye bread also--worth every penny. Totally awesomw....but.....I changed the dressing a little. I only used 1/2 cup mayo added 1/4 cup more sour cream....both of which were Lite. I also added about 6 geen olives, chopped. I have to say I have had a Reuben or two in my life. This was truly one of the best and I made it!! As a suggestion, If you're going to make this do it the right way. Buy your ingredients fresh and straight from your local deli. My deli always gives me a little side of Russian dressing, but now I can finally make my own!! I admit...I used pre-sliced rye bread. But, the sandwich was great. I made homemade corned beef using Alton Brown's recipe. You'll never use store bought again once you make your own. This is such a good Sandwich recipe. The Reuben is such a great sandwich to begin with and the little effort that it takes to whip the Russian dressing together,"I believe" makes this sandwich. You will never be satisfied with store bought again.Just make certain that you drain the (good)sauerkraut very, very well, or you will be swimming in the juice. Good quality bread, corned beef make this a winner. Weight it done in the pan,grill that bread nice and dark, add a few chips. I can't stand the thought of corned beef and sauerkraut but my husband begged for homemade Reubens and they were a hit! He said it was the best thing I have ever made. I did buy the sliced jewish rye but it worked great. Thank goodness I only live about a 30 minute drive from Zingermans Bakehouse in Ann Arbor. I use their onion rye bread, sliced by them. I substitute cole slaw for the saurkraut, and use plenty of Thousand Island dressing, and swiss cheese, along with good quality corned beef. Got to try it with the cole slaw for a change.
