Trou Normand is known equally for its meticulously crafted cocktails and for its in-house charcuterie. The drinks let French brandies and spirits, most notably Armagnac and Calvados, take the lead. The owners feel the rich flavors of cured meats stand up well to distilled spirits; hence the 40 different types of charcuterie on offer, including exotic salame like rabbit with preserved orange and cumin.
