Iron Chef winner Ed Lee loves the Northeastern Thai food at Night + Market Song especially the pork toro and larb lanna. The pork toro, aka pork cheek, is cured, marinated and then grilled to caramelized perfection, “it’s probably the best thing you’ve put in your mouth,” says Chef Lee. The larb lanna is a rich amalgamation of ground pork seasoned with pig’s blood, shrimp paste, fish sauce, pork liver and spices. The mixture is then quickly cooked in a screaming hot wok and finished with fresh herbs, fried garlic and crisp vegetables. It is, “the nirvana of ground meat,” raves Chef Lee.
