When architects redesigned this resort, they surrounded the pool with lava rock that seamlessly blends into Kauai's Hanalei Bay, the backdrop for the classic film South Pacific. Scottsdale gets 330 days of sun every year, and this resort knows how to tackle the heat: with three pools and an army of staffers. Every guest gets a pitcher of ice water, and servers come by all afternoon with chilled hand towels, fruit kebabs and glasses of prickly pear iced tea, inspired by the cacti that dot the surrounding Sonoran Desert.
