If you’re looking to dine on a dish that has the locals’ stamp of approval, order the saimin at Sam Sato’s. The Hawaiian version of this Chinese dish is a mash-up that reflects the ethnic melting pot of the plantation workers who created it: Chinese noodles with Japanese broth, and add-ons of Filipino green onions, Portuguese sausage and Korean kimchi. Opt for the Dry Mein, basically a bowl of saimin with the broth on the side.
