When Iron Chef Gauntlet competitor Jonathon Sawyer wants breakfast, he is seeking bold, hearty in-your-face-food. Dove’s, a delicious amalgamation of Southern-inspired, Mexican-American fare, is the place for him. His go-to dish is the arroz con carnitas. The dish features pork shoulder which is cooked low and slow in a mixture of spices, pork fat, Mexican cola and milk until tender and unctuous. A heaping portion of the porcine pile of deliciousness is then placed on top of earthy brown rice which is topped with pigeon peas, sweet potatoes, giardiniera and a perfectly poached egg. If Chef Sawyer is craving hot and spicy he goes for the pozole roja which is made with braised beef cheek, rich pork stock and hominy served with avocado, radishes and crispy tortillas.
